In 1866, The Jack Daniel Distillery was officially established, making it the very first registered distillery within the US, with Jasper Newton Daniel (or Jack, as he was more commonly known) as the Master Distiller. The opening of his now-famous distillery would follow shortly thereafter, right next to Jack Daniel’s prime resource: the mineral-rich Cave Spring Hollow.

 

Mr. Jack chose to build his distillery right next to the Cave Spring Hollow because of the abundance of clean, clear spring water flowing from the limestone cave spring, that was just perfect for making whiskey. It’s the reason, over 150 years later, that the Jack Daniel Distillery is still making whiskey in Lynchburg.

So what makes Jack Daniel’s a Tennessee Whiskey, and not a bourbon?  It’s our most important step in the process - Charcoal Mellowing, or “The Extra Blessing” as we like to call it.  Charcoal Mellowing is an old-time process that Jack insisted on and one that has been in continuous use by the Jack Daniel Distillery ever since.

 

Once distilled to 140-proof, we send our clear, un-aged whiskey on a painstaking journey. Drop by drop, it crawls through our handcrafted charcoal at a pace dictated by gravity and nothing else. The trip takes 3-5 days to complete and once it’s done, the whiskey is transformed. Might even say blessed.
